5g Yacón Plant! This is a crown division from our yacón patch and is a variety we've grown in Oakland for years.

- Soil: Can tolerate any soil when established.
- Water: Needs consistent water to fruit well and flourish, but drought tolerant when established.
Yacón is a perennial plant from South America grown for the sweet potato-sized, sweet tubers. 5-8' sunflower-like flower stalks grow from spring till fall and die back in winter, at which time the tubers can be harvested and the crown divided and replanted for next year's growth.
Yacón can be eaten raw and tastes like a sweet jícama. It is also wonderful in baked goods where it retains structure through baking and takes on an apple-like taste.
